Coralie Boris
Native respectively of Charente and Hautes-Alpes, we meet at the restaurant Jean Sulpice in Val Thorens.
During our route in prestigious fine dining establishments around France – Maison Troisgros, Petit Nice, Maison Pic, Casadelmar, Cala Rossa – we get to like the requirement of good work while developing a desire for independence, creation and freedom of expression.
After some other experiences abroad, in Norway and Switzerland, we decide to open our restaurant together in France … And more exactly in Montpellier!
Our desire is to create an intimate, warm and contemporary place, serving a gourmet, contemporary cuisine, Mediterranean-inspired, based on fresh and local products, resulting from reasoned agriculture, accompanied by attentive service.
We believe that living together as a couple and working with each other gives us a complicity that strengthens our complementarity: our pride is to value the work each other.
Our project is to welcome guests more than customers, to share our pleasure and to exchange around our cuisine.
Boris’ cuisine is generous, uncluttered, frank, highlighting the product.
In the dining room, Coralie listens to every client, thoughtful, involved, applied, but discreet.
Depending on your wishes, the service can be fast – for example at lunch – or more relaxed.
Today our project is continuing and we are fortunate to be surrounded by a magnificent team made up of : Julien, Hugo, Nora, Guilhem, Lou-Anne and Mathieu
